This is a delicious and nutritious soup that will warm you from the inside this winter season.
1 cup chopped yellow squash
1 cup chopped zucchini
1 cup chopped broccoli
1 cup chopped cauliflower
1 cup chopped yellow onions
1 garlic clove, minced
2 teaspoons extra-virgin olive oil
1 cup chicken broth
1/4 tsp. fresh dill
sea salt to taste
ground black pepper to taste
Steam the squash, zucchini, broccoli, and cauliflower. Set them aside. In a pan, caramelize the onions and garlic in the olive oil. Set them aside. In a high-speed blender, working in batches, puree some of the broth with the steamed veggies, onions and garlic, dill, salt, and pepper. When the mixture is smooth, pour it into a large soup pot. Add any remaining broth and simmer the soup until it's hot.
