When I was a young boy I absolutely hated tomatoes! I wouldn't eat anything that had chunks of tomatoes except for salsa. When I did eat salsa I made sure there were no tomato chunks!
Boy times sure have changed
Now I cannot get enough tomatoes. I did not think just a few years later my palate would change so much and that I would love maters! Whenever I have the options for adding a tomato, whether a sandwich or hamburger, the answer is always yes!
Sometimes I makeshift my own little appetizer and today was one of those occasions!
Tomatoes with Provolone
This is a quick snack that is extremely flavorful and healthy. There are only a few ingredients:
- Grape Tomatoes (of course)
- Provolone Cheese (duh!)
- Olive Basil
- Balsamic Vinegar
- Pepper
- Salt
The way I make them is pretty darn easy! Basically, I just layer the ingredients on top of each other!
