The Secret Ingredient Is…Buttermilk
Two things to know about using buttermilk in your pancake recipe:
Add at least 1/4 teaspoon baking soda for every 6 ounces of buttermilk to get those bubbles forming in the batter.
Cook the batter right away, otherwise the bubbles will lose their lifting power. When I’m making buttermilk pancakes, I mix the liquid ingredients in one bowl and the dry ingredients in a separate larger bowl. Then I wait until my griddle is hot before I pour the liquid into the dry and combine with a few quick strokes of my whisk.
