As some of you may know already, I love picking mushrooms, its like my favorite winter activity and I know how to recognize 12 different edible species.
Since wild mushrooms can be deadly, I only pick the ones whom I'm completely sure about.
Yesterday I had a very good mushroom hunt, I found:
- Suillus granulatus
- Lactarius delicious
- Tricholoma terreum
- Clitocybe nuda
- a nice bunch of wild Asparagus.
I cooked something out of my head, without any recepie and it came out SO good I had to share it:
Ingredients:
- 300-400gr of mushrooms, the more kinds the better.
- 80gr butter.
- 250gr bacon (can do without if you're vegeterian)
- 4 spoons olive oil
- 1 big onion
- 2 spoons chopped parsely
- 1 spoon of pepper and paprika
- chopped asparagus
Making:
- Make regular white rice in a pot, and let it cook.
- Cut all the mushrooms and the onion and asparagus to small-mid sized pieces and fry them on mid-heat in a pan along with 60gr butter and 2 spoons olive oil. keep cooking them until the mushrooms lose some size and a lot of their liquid.
- Cut the bacon in small pieces, and fry it in another pan with 2 spoon of olive oil and 20gr butter, until it starts getting fried. at this point - add it with its liquids to the pand with the mushrooms.
- Once the rice is ready, add the mushrooms and bacon into the rice bowl and mix well together for a minute or two while its still cooking.
