Coconut Shrimp
1/2 cup of all purpose flour
1 tbs of cornstarch
1 whisked egg
1 lb. of shrimp peeled shrimp to the tail
1 tsp garlic powder
1 tsp black pepper
1/2 cup of breadcrumbs
1 tsp of salt
1/2 sweetened shredded coconut
To start peel your shrimp till the end without removing the tail end.
Next combine corn starch and flour and place on a long shallow container. Whisk your egg in another container and set aside. In another container combine shredded coconut, bread crumbs, garlic powder, black pepper and salt.
Now its time to coat your shrimp. Place the shrimp in the flour and cover thoroughly after that place the shrimp in the egg cover all areas. Then place the shrimp in the coconut breadcrumb mix and press firmly to attach all the coconut and bread pieces. Place your shrimp in a flat container to hold until you are ready to fry them.
Now take a large pan and heat 3 cups of oil on medium to high heat. Place your shrimp in the frying oil and cook for 1 minute. Do not leave them in there to long as the shrimp will dry out . Now enjoy your delicious shrimp.
