Pichi pichi is one of the most common filipino delicacies that many of people of all ages love to eat. Having lived for so long in laguna, I remember buying pichi pichi every afternoon from a woman who hawks it perfectly arranged in a basket. I always looked forward to buying it everyday, so I became her customer. Her pichi pichi always looked fresh and delicious.
Pichi pichi is commonly known to be made with coconut, is it quite delicious and happens to be a lot of people's favorite merienda. Today's recipe is slightly different from the regular pichi pichi everyone knows, because it is made with cheese. The first time I tasted this type of pichi pichi, I literally could get enough, and even after it was finished I continued to crave for it that why I perfected this recipe and want to share with everyone how to make a very delicious pichi pichi at home in just 3 easy steps.
To get started you would to prepare all your ingredients;
2 cups of grated cassava
1 cup of grated cheese
1 cup of sugar
2 cups of water
½ teaspoon of Lye water
½ teaspoon of Buko pandan essence
Steam pot
Small round Molds
Step One
In a large mixing bowl, place the grated cassava, sugar and water. Mix the ingredients very well.
Step Two
When properly mixed, add in the lye water to the mixture and mix it very well. Then finally add in the buko pandan essence, then mix it in.
Step Three
Scoop the mixture into the molds and cook by steaming until it becomes translucent which usually take upto 45 mins or even upto an hour. Remove from heat and let it cool for about 10 minutes.
Once the pichi pichi is cool you can now remove it from the mold using a chop stick to that the pichi pichi won't get stuck to the mold.
Place the pichi pichi in a serving plate and top with a generous amount of grated cheese.
Some people may like to do it the traditional way buy using grate coconut, it all come down to your desired taste. I will say use cheese because the taste is just brilliant.
