Ingredients for two cups
150 gr of dark chocolate 55% of excellent quality
300 gr of water
7 grams of cornstarch
a pinch of chili Habanero Chocolate n. 9
Method
Dissolve the starch in 50 gr of water taken from the total. Put the remaining water and the chopped chocolate in a saucepan. Slowly melt the chocolate, stirring constantly, when the chocolate is melted, incorporate the water with the melted starch and bring to a very light boil. Turn off and wait a few minutes, sprinkle the chocolate with a pinch of pepper and pour into the cups.
To make chocolate in the cup I did not use milk (it did not inspire me to pair it with chilli) but water. In order to keep the taste of chocolate unaltered, in the mouth the effect is not fat and that pinch of chilli added at the end gives a very interesting closure. In fact, the pepper is not perceived at first but after a few seconds and persists pleasantly.
