Mini blueberry cupcakes
This makes around 48 mini cupcakes
INGREDIENTS
125g flour
125g caster sugar
1/4 teaspoon of bicarbonate soda
125g soft butter
2 eggs
vanilla extract
2 tablespoons milk
blueberry jam ( homemade)
METHOD
Preheat the oven to 170°C and line a 12-hole muffin tray with cupcake cases.
Sift flour, sugar and bicarbonate of soda into the bowl. Then add soft unsalted butter and eggs. Start mixing on the low speed, once all the ingredients have come together, turn the mixer on medium or high speed and mix for about one minute.
Turn it off and add milk mixed with vanilla extract into the mixture. Mix for another 30 seconds. In the end add jam but don't mix only stir a little ( it doesn't need to be all even ).
Filled in up about 2/3 full and bake for 10-12 minutes.
