White sugar is pure white crystalline sugar prepared by sugarcane or sugar beet juice. Their juice is boiled to increase solids present in the juice. As solids reach to 70%, Sucrose (Sugar) starts to crystallize. It is purified sugar that does not contain any impurities in it.
While brown sugar is prepared by white sugar. As we all know minerals are too important for us. So, during crystallization, the liquid remain is known as molasses. This molasses contains minerals. These molasses is employed to white crystals of sugar.
