On sunny days a fresh salad is the best choice for lunch or dinner. Me and my gf love to eat this salad on the balcony when the sun sets. It feels like being on a holiday :)
Ingredients
For two persons you need:
- 1 package of arugula (rucola) salad (if possible fresh from the market)
- 400g canned peach (use fresh and sweet peach if available)
- 400g mozzarella
- 200g Parma ham (Serrano ham works as well)
- 1 lemon
- 6 tablespoons of olive oil
- 2 tablespoons of honey
- pepper
- white bread (like french bread or ciabatta)
Preparation
Wash the salad and spread it on two plates. Then cut the peaches and the mozzarella into bite-share pieces and divide them evenly. It's even better to tear the mozzarella into pieces with your hands, it looks much nicer :)
Do the same with the ham and spread it evenly. It's a good idea to have a nice balance of ham, peach and mozzarella on each plate. For that certain something you could add some roasted sunflower seeds or pine nuts.
For the dressing mix honey, olive oil and a pinch of pepper with the juice of half a lemon. I recommend to warm up your glass of honey in the microwave first. That will make mixing much easier. It's important that the honey doesn't get to hot, that will destroy the goodness of the honey. Depending on the existing amount in the glass, set your microwave to 360°C for 30-50 seconds. Now you can mix everything without problems.
Enjoy life
Finally sprinkle the salad with the dressing and then serve the dishes with bread. We love to eat it with crispy, still warm ciabatta bread. Preferably enjoy the meal outside in the sun and turn on some music. Some relaxing Cuban sounds work fine :)
