It's Pi Day!
Last night as I was reading the news, saw Stephen Hawking passed away. I remember reading an article a week or so ago, I think it was on buzzfeed, of how Stephen Hawking threw a party but not sending invitation to nobody. His purpose was to show that time traveler does exist. So no need for invitation because those from the future would know anyways. But yeah, nobody showed. I was bummed, imagining if only this and if only that 😌 But hey, maybe the people from the future just don't want to let us know.
RIP Stephen Hawking.
On another topic, today is Pi Day, and how do we celebrate this day that actually don't really have nothing to do with pie the pastry? By having a slice of pie, of course 😀
Coconuty Peach Pie to be exact.
I've made this peach pie quite a few times before, the crust is very versatile. You can use whatever fat you choose, vegetable shortening, dairy/dairy free butter, dairy/dairy free margarine, and golden vegetable shortening for buttery result, and the crust woild be awesome. On the other hand, (solid) coconut oil and vegetable oil would work but I didn't really care for the result, so I won't really suggest these two.
Double Crust
As you can see my pie is an open pie, but here I am giving a double crust recipe. The reason my pie was open, was just because I wanted a pie that looked a bit different, that's all 😂 You know me, always playing with my food.
In a bowl, mix to combine:
- 2 cups of all purpose flour
- 1/2 cup of dessicated coconut (I've used either sweet or unsweetened, it's up to you)
- 1/4 c sugar of your choice (sugar subs, coconut palm sugar etc)
In a separate bowl, beat to form dough:
- 1 cup vegan margarine
- flour mixture above
- 6 tbsp coconut water (without coconut chunk)
Divide dough into two, roll one and place on greased pie plate, chill in the fridge until ready to use. Pat flat the other dough, wrap in cling wrap and chill until ready to use, as well.
Filling
- 1 large can peach slices in syrup, drain
- 1/2 cup sugar of your choice
- 2 tablespoon all purpose flour
Baking
- Preheat oven to 425 F
- Take out dough disk and roll flat
- Mix filling ingredients and spoon into prepared crust
- Top pie with the other crust and poke holes
- Sprinkle pie with sugar and bake for 10 minutes
- Lower oven heat to 350 F and bake for another 40 minutes
