This healthy and delicious dish contains one of my favorite foods, chickpeas. Chickpeas are incredibly good for you and should be included in every well balanced diet. I generally enjoy chickpeas in hummus but I'm always eager to try them any other way. I first discovered this dish at a Las Vegas buffet and knew that I must try it at home.
The ingredients for this dish are quite simple. All you need is chickpeas, spinach, onions, garlic, tomatoes, curry powder, coconut milk and olive oil.
Fresh chickpeas are always superior to canned chickpeas. The key is to be prepared and to soak your chickpeas in a bowl of cold water the night before you intend to use them.
I started this dish by sautéing chopped garlic and onions in a cast iron skillet for five minutes. I prefer to use a cast iron skillet whenever possible as it is superior to alternative skillets. I added the curry powder as well as cumin, salt and pepper. Then I added the chickpeas, a can of diced tomatoes and some almond milk since I did not have coconut milk on hand. I simmered the dish for about 15 minutes, then I added the spinach and allowed it to simmer for another 5 minutes and then it was ready. I ate it as is but it'd also be delicious served over rice.
Not only was this dish easy to make, it was also so delicious I had seconds and didn't have any leftovers. You can play around with the recipe, perhaps adding more spice with jalapeños, cayenne or chili powder. Next time I will try adding fresh ginger.
It's great to be able to make a dish that is healthy, easy to make and inexpensive. I highly recommend this dish if you like curry and chickpeas.
