Who doesn't love pancakes? I know I do!
Pancakes can be one of those easy recipes that take a long time to do thought, being the reason I don't make them often, and if I do, it only happens during the weekends.
Sometime ago I came across a recipe with only 2 ingredients and thought to try it. Since then, I've made these many times. They're quick and easy to make (it only takes about 15 min), super healthy (gluten and dairy free, no added sugar), kid friendly, and are delicious by themselves or with extra fruit, and a coffee. A great breakfast for any day of the week!
Prep: 5 min | Cook: 10 min | Servings: 8-10 small pancakes
Ingredients:
- 2 eggs
- 2 medium size ripe bananas
- butter / oil (optional)
Instructions:
- Mash the bananas with a fork in a bowl
- Add the eggs and mix well together (You can also put all ingredients in a food processor and blend)
- Heat a non-stick frying pan over a low-medium heat and add butter / oil if preferred. Pour around 2 tbsp of the batter to make a small pancake. (You should be able to fit about 3 pancakes on a medium sized pan).
- Cook for about a minute, until bubbles form all over the surface and gently flip the pancake. Cook for another minute.
- Transfer the pancakes to a serving place, add any fruit, honey or other topping if desired, and serve warm.
