Ingredients: any fish of your preference, we found fresh mackerels, ½ kgr spinach, 200 gr chards, 5 spring onions chopped, 1 leek chopped, ½ bunch of dill finely chopped, 1 yellow bell pepper cut in pieces, 2 tomatoes cut in pieces, 100 ml garlic olive oil, salt and pepper. Optionally add 2-3 gloves of garlic
Clean your vegetables very well. No need to cut the spinach and chards into pieces. You may only cut off the tops of the chards. Lay all the vegetables on a baking tray and sprinkle them with oil, salt and pepper. Put the fish on top of them, after you have oiled and seasoned them. Poor the remaining olive oil all over the tray.
You bake in the oven at 200C with no air for 45’. Your fish are ready once they start gaining colour.
