My mother cooks deliciously and a bit fatteningly..for instance she uses a lot of olive oil.. she fries.. but whatever she serves is tasty.. I, on the other hand, cannot claim to have her skills, but I try to cook lighter.. that is lately, post my diet..
In this istance I couldn't resist and ate my entire plate.. 🤩 I suppose the tastyness stems from the fresh cuttlefish apart from my mother's skills.
Ingredients: 1kg of cuttlefish cleaned and cut (I would try to keep the ink), 3 or 4 spring onions cut in small pieces, 1/2 bunch of parsley finelly chopped, 1/2 bunch of dill finelly chopped, 1 glass of broth, 1 small glass of white wine, 2 gloves of garlic chopped, 1/2 glass of olive oil, 1 cup of rice, salt and pepper
In the pressure cooker you saute the spring onions with the parsley, the dill and the garlic. You add the cuttlefish and toss. You put the wine and let the alcohol avaporate. Add the broth, close the pressure cooker and let it cook for 20' in low fire. Open the pressure cooker and add a glass of water, salt and pepper, and the rice. Let it cook till the rice is ready (about 15 to 20min).
Turn off the fire, cover your food and let it rest.
