I think this is a nice version of minestrone soup, with extra spicy flavour to shield you from the autumnal chill. As it is the beginning of fall, a nice, warm, comforting soup is a must!
Ingredients: 1 small tbsp turmeric finely chopped, 1 small tbsp of ginger also finely chopped (quantity depending on your tastes), 3 tomatoes chopped w/o their skin, 3 zucchinis chopped, 2 onions medium sized chopped, 3 potatoes chopped, 2 carrots chopped, 1/3 of a bunch of celery minced, 1 cup of orzo (I used gluten-free; also you can use any kind of small pasta or rice you like), 2.5ltr of water, 2 tbsp of olive oil, salt and pepper to taste
I put all my vegetables, along with the ginger and turmeric, together in a deep pot and allow them to boil in the 2.5ltrs of water. I then lower the temperature to medium. This process will last about c. 20’ . Then I add the orzo and let it simmer for another 15’. In the end I add the olive oil, the salt and the pepper (depending on my tastes).
You might add some nice ground gruyere and croutons. I escorted my soup with nice cheese and a home made bread.
