A brandade is a potatoe and fish dish. You mash some cooked potatoes and ad some cooked fish. In this case i added some salmon and haddock. Then i also added little North Sea shrimps, spring onion, chives and some baked leek.
And on top my on low temperature cooked egg.
I cooked these in my “roner” waterbath for 45 minutes on 63.2 degrees. This way it’s a bit like a poached egg.
The yolk stays juicy, so it’s the sauce for your brandade.
I finish with some shiso leaves and smoked salt.
