Hi guys, today i will show you a healthy meal. I made this for lunch for me and after a few not so healthy lunch days that i had.☺️
Chicken breast with quinoa salad and some curry sauce.
I’ll give you the recipe of the quinoa salad.
So of course i started by cooking my quinoa. I first wash it and then add 4 times as much water than quinoa. Let that simmer for about 13 minutes and the quinoa is ready.
Then i cutted some leek and zucchini and heated it in some olive oil.
Let it cool down.
Some sweet pepper.
I also add this little spicy basterd.
Some cilantro and pickeled red onion.

I also add a couple of cutted cherry tomatoes and chives.
Mix everything together.
Then stir through the quinoa. I also add some lime juice and good arbequina olive oil. Of course season with salt, pepper and a lot of love.
I used a little fresh sour cream as a base for my quinoa salad.
Then the sous vide cooked chicken breasts. 1hour on 58 degrees(for the most tender chicken possible). Afterwards baked shortly with some chicken spices.
Some curry sauce made with coconut milk.
And ready to serve.
If you have any quinoa salad left. U can use it the next day to have a healthy snack. For example in an omelet.
