Hi guys, long time no see.
So almost summertime, we had some great sunny days here in Belgium.
And the best dish during summer for me is a fresh cut, juicy and spicy Ceviche.
So at the restaurant were i am currently working i prepared this for lunch. The “Don Ceviche” by Martin Morales. Peruvian guy who has restaurants in London.
A simple dish. All you need is very fresh Sea Bass, spicy pepper, sweet potatoe, red onion, cilantro, ginger, garlic and time.

I just added some red shiso leaves and a schrimp cracker for decoration.
Need some freshness this summer, make yourself a Ceviche. Maybe in combo with a Pisco Sour cocktail.
