Raj Kachori is a spicy chaat (snack) filled with spicy condiments and spices. A classic Indian street food treat that makes your mouth watery. Raj Kachori is kind of a basket made up of semolina and all-purpose flour and filled with yogurt, onions, tomatoes, boiled potatoes, chickpeas and much more. Garnished with some pomegranate and Indian sev.

INGREDIENTS
1. For The Kachori
- All-purpose flour- 2 cups.
- Semolina- 1 cup.
- Oil- 1 tablespoon.
- Salt- ½ tablespoon for making the dough.
- Lukewarm water- ½ cup for making the dough.
2. For The Filling Of Kachori
- Boiled whole green gram- ½ cup.
- Chickpeas- 1 cup.
- Boiled Potatoes- 1 cup.
- Onions- 1 cup.
- Bananas- ½ cup.
- Tomatoes- 1 cup.
- Pomegranate- 1 cup.
- Green chilies- 2 finely chopped.
- Whipped yogurt- 1 cup.
- Green cilantro chutney- ½ cup.
- Tamarind chutney- ½ cup.
- Fine sev- 1 cup available at all Indian grocery stores.
- Salt to taste.
3. Spices
- Asafoetida- pinch
- Red chili flakes- ½ tablespoon
- Mango powder- ½ tablespoon
- Chat Masala- 1 tablespoon
METHOD
1. Dough
- Add all ingredients like all-purpose flour, salt, and oil in a bowl. Now add water and mix it to make the firm and pliable dough.
- Cover the dough and keep it aside for at least 15 minutes.
2. For The Kachori
- Separate the dough into equal parts and make round, little thick and big puris.
- Heat the oil in a deep pan on a high flame and then reduce the flame to low and deep-fry the puris till it puffs up, crispy and turn brown.
- Absorb excess oil on absorbent paper and keep them aside.
3. For The Filling Of Kachori
- Combine the whole green gram, chickpeas, potatoes, asafoetida, red chili flakes and salt in a bowl and mix them well.
How to Proceed With Kachori
- Gently make an inch sized depletion in the middle of the kachori and add filling in it.
- Now add two tablespoon onions, tomatoes and one tablespoon banana and one tablespoon pomegranates in it.
- Pour some curd, green and tamarind chutney, and season it with chaat masala, mango powder and red chili flakes.
- Sprinkle some sev on top and pomegranate for garnishing.
