Hinompuka is a declicious-gooey Kadazan cake made of glutinous rice wrapped in Banana leave. You can choose to add either sweet potato or Banana into the main ingredient to give it flavour variety. Hinompuka is usually served on certain occasions such as Kaamatan Harvest Festival (celebrated yearly on 30th-31st May), a Kadazan traditional weddings or other celebrations such as engagement, birth etc.
I've been taught by my mother how to make this delicious cake when I was a kid. It's so simple and easy to make. Glutinous rice is rich in carbohydrates and is good for instant energy. Lots of people said it fattening. No, they're wrong. Glutinous rice is not fattening if you eat it in a small portion. In fact, it is a good source of vitamins and minerals.
Today, I'm going to share what my mother taught me on how to make this declicious cake.
Ingredients:
1kg Glutinous rice flour
200g Black rice flour
Malacca sugar
2 cups of coconut milk (extracted from the 1st grated coconut)
600ml water
Banana leaves
Method:
Mix the glutinous rice, Black rice flour, Malacca sugar, coconut milk
and water together to make a soft dough.
Prepare and clean the Banana leaves. Cut to 8 inches and boil in hot water.
Using spoon, put the mixture on top of the Banana leaves and wrap it up.
Steam the wrap mixture in a steaming pot for 30 minutes.
Tadaa... Now its ready to Serve. You can have it either hot or cold.
