Dean needed a whole book, and he needed it in photographs because half his staff doesn't read english. This is part of that book.
In a sense, this post is a bit of a cop-out. Not much text needs to be offered here, but I can throw in a bonus at the back. Now that you know this is the beginning of a book on restaurant food preparation, you'll at least see what a graduate degree in photography can bring to restaurant that is 20 minutes from the Mexican border.
That was the section on proper sprout preparation. I think its interesting because you can see how the sprouts are shipped and the environment they were prepared in. There is really no part of the restaurant chain we didn't document.
That is how they prep the lettuce "bun" for the gluten free burger.

We are off to Sebastopol today to try and find some work. We have leads but only about half the time do those ever really pay out. These are pretty good leads though. Our phone never rings and last week we got four calls in two days. Hope for the best and all that. We still do way more than half our time in sales. Really hoping that can at least head towards 50-50. Maybe if all photography had to be done by union members then I really think our sales would flourish. Nothing quite like a little government intervention to really stimulate an industry.
Final question: Does this page load differently than the last couple? If this is slower its because I didn't save for web and instead just posted straight 1600 dpi files. Still wondering it that arduous process even matters. Also, its not displaying the images in the preview right now, and I'm going to hit post anyway.
