This Holy Week, Christians remember the crucifixion and death of Jesus. To pay respect to His sacrifices, we do fasting and avoid eating meat. Thus, Binignit or Ginataang Halo-Halo becomes popular. It is made with glutinous rice or Landang to have a rich mixture and cooked in coconut milk with slices of sweet potato, taro, saba banana and sago.
Color of the Binignit may depend on the ingredients like the sago or taro
Ingredients:
4 pcs Sweet potato
1 pc Taro/Gabi
6 pcs Saba banana
3 packs Sago
3 cups Coconut milk
1/2 cup Landang
1/2 cup Brown sugar
-Quantity will really depend on your preferences.
Procedure:
- Wash the sweet potato with water before peeling to remove soil.
Note: I don't usually wet the taro before peeling. It makes my hand itchy during peeling or slicing.
- Peel the sweet potato, taro and bananas.
- Slice the sweet potatos, taro and bananas in uniform sizes.
- Boil the sweet potatoes and taro in a pot with water just enough to cover them. Once boiled, put next the Landang.
- Once boiled, add the bananas then the sago.
As much as possible, don't add the sago's juice as this contains too much food coloring, making the binignit look too bright.
- Add and stir the coconut milk.
You may buy coconut milk from the gorcery or by squeezing the grated coconut with water.
- Add brown sugar to taste.
- Serve hot.
The binignit look like strawberry flavored because of the food coloring from the sago.
