When you make this, you will be pleasantly surprised how much better the homemade caramel corn tastes than store bought. A delicious, buttery sweet and salty, home and party snack. You can give this caramel corn away as a homemade package holiday gift or any other special occasion you can think of.
This is super easy to make and you don't need a huge copper kettle or a candy thermometer.

What you need to prepare:
12 quart pot
Large heavy duty mixing spoon
Large Roasting pan or 2 large deep aluminum baking trays
Ingredients
You can use any brand for your ingredients. (I like choosing off brands, they cost less, and I save money).
2 Stick of butter
2 Cups of packed brown sugar
30 Cups of popped corn ( Approx. 1/3 to 1/2 bag of popcorn equals 30 cups of popped corn)
1/2 Cup of Light corn syrup
1 Tablespoon salt
1 Tablspoon Baking soda
1 Tablespoon of vanilla extract
The steps:
Pre-heat oven to 200 degrees.
Pop your popcorn in large 12 quart pot. Then measure and add 30 cups of popcorn, and put in a roasting pan or several aluminium baking trays., and set aside.
Melt 2 sticks of butter in a medium saucepan.
Add 2 cups of packed brown sugar.
Add 1 Tablespoon of salt.
Add 1/2 cup of light corn syrup.
Add 1 Tablespoon vanilla extract.
Stir often and bring ingredients to a boil. Stir (about 10 minutes) or until brown sugar is dissolved.
When brown sugar is dissolved. Add 1 Tablespoon of baking soda. Keep stirring until the mixture turns a lighter color and it starts to foam. This is suppose to happen.
Remove from heat.
In a large roasting pan, or aluminium trays, pour the mixture all over the popped corn.
Bake at 200 degrees for approximately 45 minutes to 1 hour.
Remove from oven and fold the caramel popcorn every 15 minutes.
Then remove from oven.
Before the caramel corn completely cools down, break away the big cluster of caramel corn.
Store in sealed plastic container it will keep well for up to 7 days or so. You can also use individual plastic baggies for single portions of caramel corn.
