So today we look a bit closer at some vegetables, what we go to have for dinner tonight? Every time it is a question what you will have for dinner, and when you got the time it is ok! but when you have a lack of time, it is horror. :-)
Today I decided on Keftedes filled with feta. little meatballs with feta inside.
And for vegetables, we will take roasted parsnip with garlic, courgettes fritters, and of course tomato with feta.
Preheat the oven ... 240C
Peel the courgette with a thin peeler, and cut in to slices, sprinkle some salt over it and let it leak out above the sink. !
Peel the parsnip with a thin peeler, cut in quarters or a bit smaller, put it together with some chopped but not pressed garlic crumbled peppercorns and salt, and with a tiny bit of olive oil mixed in to an oven dish.
Is your oven on temperature, put them in because they like to be a long time in the heat, 40 minutes for sure.
Warm up some olive oil in a flat pan or in a wok,
put some floUr in a bowl
lay piece for piece the courgette into the flour until they are not wet anymore and they are slightly coated in the flour,
then slip them one by one into the sizzling oil, till they are golden brown Oh that is so delicous ! hmmmm
Cut quickly a few tomatoes and a piece of feta, cut an onion in rings and decorate it over the tomato with feta.
