This is a very simple and fast-to-prepare dish... Takes 15 minutes to prepare altogether (OK I was cheating a little bit, because I did not make the pesto myself - that would add another 5-6 minutes π). We usually eat it with grated smoked cheese... but any cheese would do.
This is how I prepared it
I boil water and cook the penne.
I cut the cherry tomatoes into four quadrants and fry them a little bit in a spoonful of olive oil. After 2-3 minutes I add 2 cloves of mashed garlic and a little pepper.
Finally, I mix the penne with the tomatoes and 3-4 spoonfuls of Pesto sauce (I love Bertolli). Cook it for 2-3 minutes and you are done! A perfect dinner or lunch for busy days! π
