This curry has enough kick in it, not even Chuck Norris will mess with it. It's made with a special curry powder from Durban South Africa and its called Mother in law's tongue, my mother smuggled it in for me when she came to visit last, it's like contraband, you can't bring food items into the EU.
This is a curry in a hurry, for when you are hangry, that is not a spelling mistake grammar bot if you are reading.
First here is the ingredients, not that much as you can see, all healthy and no meat, low cholesterol, animals are friends not food.
So I get a big ass pan, lightly oil, as always I use spray cook only 1 calorie per spray. Sprinkle fennel seeds and mustard seeds.
I chuck in chickpeas and fry till golden brown.
Then chop up the onions and dump them in.
Then I chop up the aubergine into cubes and throw them in the mix.
Then for the ginger, I like to use a grater, using the fine gratings.
And I do the same thing with the garlic.
I add a little water and add 1 teaspoon garam masala.
1 teaspoon ground coriander.
Half a teaspoon turmeric.
Then the special curry powder, I don't even measure, I just chuck it in.
Mix up and add a can of tomatoes.
A teaspoon of salt.
Let it simmer for 15 minutes, and chop up some fresh coriander.
Add it to the mix, let it stand for a few minutes, and there you have it 1 kick ass curry.
