Ingredients:
.500 grams of mutton (cut into medium-sized pieces)
. 2 cups of basmati rice
. 2 large onions (thinly sliced)
. 3-4 green chilies (chopped)
. 1 tablespoon ginger-garlic paste
. 1 cup of yogurt
.1 teaspoon of red chili powder
. 1 teaspoon of turmeric powder
.1 teaspoon of cumin powder
. 1 teaspoon of coriander powder
.1 teaspoon of garam masala powder .1/2 teaspoon of black pepper powder
. 2-3 bay leaves
.2-3 cinnamon sticks
. 4-5 green cardamoms
.4-5 cloves
. 4-5 tablespoons of oil or ghee Salt to taste Chopped cilantro and mint leaves for garnish Instructions:
Wash the rice and soak it in water for at least 30 minutes.
In a large pot, heat oil or ghee over medium heat. Add bay leaves, cinnamon sticks, green cardamoms, and cloves, and sauté for a few seconds until fragrant.
Add the sliced onions and green chilies to the pot, and sauté until the onions are golden brown.
Add the mutton pieces to the pot, along with ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala powder, black pepper powder, and salt. Mix well and sauté for a few minutes until the mutton is browned.
Add the yogurt to the pot and mix well. Cover and cook the mutton over medium heat for about 20-25 minutes, stirring occasionally, until the mutton is tender and cooked through.
Meanwhile, boil the soaked rice in a large pot of water until it is cooked but still firm. Drain the water and keep the rice aside.
Once the mutton is cooked, spread half of the cooked rice over the mutton in the pot. Then, spread the remaining rice over the first layer of rice.
Cover the pot with a tight-fitting lid and cook over low heat for about 10-15 minutes until the rice is fully cooked and the flavors have infused together.
Garnish the biryani with chopped cilantro and mint leaves, and serve hot with raita or any other side dish of your choice.
Enjoy your homemade spicy mutton biryani!
