I don't know how time flies by so quickly, and I have to prepare breakfast meals for the freezer once again. It makes my life a lot easier doing large batches at one time. My husband likes to be able to thaw out whatever he feels like having the night before.
This week I did a few different things since it was raining off and on. The first one was to make stuffing for a side dish. I had a lot of dried bread cubes in the pantry and decided to use them up.
I used pork sausage, onion, celery, herbs and cream of mushroom soup. Putting the stuffing in muffin cups offers us the perfect size for a meal. After baking them I put them onto a parchment-lined cookie tray and freeze them before vacuum sealing them.
Breakfast
I made a large batch of buttermilk pancakes for the freezer.
Since I had the griddle out, I decided to make French toast too. I froze them on trays and the following morning got them wrapped up. Of course, hubby decided since they were all made, he would sample them.
Sweets
I was informed that the cookie jar only had one cookie left. After a double batch was made and the jar filled, the rest went into the freezer too.
Dinner
I had purchased a large package of chicken breasts and had some lemons that needed using. I sliced the chicken into thin slices, floured them well, dipped them in eggs and fried them until golden. A simple butter, lemon, and sherry sauce and I had five meals to put into the freezer. I am a great fan of Chicken French, so this will be enjoyed throughout the summer.
Naturally, we had enough for dinner that night along with fresh salad from the garden, salt potatoes with garlic chives and oh my goodness, it was so good.
This weekend is supposed to be wet and cool. I plan to defrost and organize one of the freezers. Sometimes you just have to tidy them up, so you don't forget what's in them. lol
