Lets Go Colorful!!! How would you like your Veggies??
Some of you probably know by now that I like keeping things simple and easy in the kitchen. I also LOVE sharing all these simple recipes and tips with everyone so that ANYONE could have a go and try to enjoy cooking a nice meal for themselves or loved ones :)
This week I went with something I don't usually make : ROASTED VEGGIES! I usually make roasted cauliflower bites but this time I tried out a few other delicious flavors/veggies.
Each day this week I tried a different vegetable, from sweet potatoes, carrots, broccoli and what I usually make - cauliflower bites. I was surprised how delicious it was and how it all got eaten to the last bite!
These recipes go great as a side dish for any occasion or even as a healthy bite sized snack.
The best thing is that you don’t have to be a veggie lover to enjoy this recipe! Once the edges of become golden-brown it gives each bite a fine crispy texture with a delicious caramelized taste which takes these vegetables to a whole new level!

4 great and SIMPLE ways to make your perfect delicious healthy side dish:
1.Roasted Sweet Patatoes:
Ingredients:
4 sweet potatoes
3 tablespoons oil
1 tablespoon rosemary
1.5 teaspoon salt
1 teaspoon pepper
Method:
-Preheat oven to 200 degrees Celsius
-Peel the sweet potatoes and cut them into cubes.
-Place the sweet potatoes on a baking sheet, combine and mix with the remaining ingredients.
-Bake for 45-60 minutes (keep in the oven a few more minutes if you like them nice and crispy, as I do! :)
Serve and enjoy each bite!
2. Garlic Seasoned Roasted Broccoli
Ingredients:
3 heads of broccoli
3 tablespoons oil
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon pepper
Method:
-Preheat oven to 200 degrees Celsius
-Separate the crowns of the broccoli
-Place on a baking sheet, combine and mix with the remaining ingredients.
-Roast for 45-60 minutes.
Serve and enjoy each bite!
3. Paprika Herb Carrots
5 Carrots, peeled
3 tablespoons oil
3 teaspoons paprika
ÂĽ cup parsley
1 teaspoon salt
1 teaspoon pepper
Method:
-Preheat oven to 200 degrees Celsius
-Peel and slice carrots diagonally
-Place on a baking sheet, combine and mix with the remaining ingredients.
-Roast for 45-60 minutes.
Serve and enjoy each bite!
4.Roasted Cauliflower Bites
Ingredients:
1 head of cauliflower, broken into florets
For the sauce:
1/4 cup olive oil
1 tablespoon paprika
A sprinkle of fresh (or dried parsley), chopped
Salt, to taste
Method
-Combine all the sauce ingredients in a cup and mix.
-Place the florets in a bowl, pour the sauce on top and mix together until all the florets are slightly coated.
-Spread the florets out onto a roasting pan lined with a baking sheet.
-Roast for 30-35 minutes until lightly browned and crispy.
Serve hot or cold and ENJOY each bite!
