One of the hardest things to give up on a low carb diet is pizza. That's why I was so happy to find this recipe for carbless pizza crust!
Though the ginger beer in my Kentucky mule was definitely not low carb....
Here's the recipe:
1 3/4 cup shredded mozzarella
3/4 cup almond flour
2 tbsp cream cheese
1 egg
A pinch of salt
Combine mozzarella and flour, throw in cream cheese. Microwave for about a minute until cheese is soft, stir, put in for 30 more seconds.
Add in the egg and salt and combine. Form into a ball and wrap it in plastic wrap.
At this point I put it in the fridge or freezer for a bit while the oven preheats to 425 F.
When the oven is done take the dough out of the wrap and place it between two floured (almond flour of course) sheets of parchment paper.
Roll it until it's flat and round.
Remove the top sheet and bake for about 10-12 minutes until it is brown.
Top with all your favorite low carb toppings and pop it back in the oven just long enough to melt cheese and make your veggies soft, about five minutes or a little more.

This dough can also be tweaked to make burger buns, crackers, wraps and several other tasties you would normally make with standard bread. Just do a search for "fathead dough" and see all the possibilities!
