Due to this awful pandemic, we all think more of what we eat, don’t we? I was always trying to eat healthy, but lately I DO pay more attention. In this post I am sharing a breakfast idea, it is something I could eat on a regular basis, as I don’t like dairy and try to avoid eating too many carbs.
This is my bowl, this morning. 💯 % vegan. No dairy, no meat. About 200, maybe 250 calories. I drank a cup of coffee with non-dairy creamer, another 50 calories, so it is a great meal. I am trying to keep my calories intake low, so I don’t gain weight. Aiming at 300 calories per meal, and 100-200 per snacks. Portion control also.
I started with 1/4 cup of dried fruit and nuts and 1/2 cup of oatmeal. I cooked the oatmeal and mixed in the dried fruit and nuts. The oatmeal must be thin and soupy, as the dried fruit needs liquid.
I let it sit for a few minutes and then I added a handful of frozen raspberries. I bought these fresh in bulk a few days ago, but I had to freeze them, so they don’t get spoiled. I stirred them gently and added some cinnamon powder.
It came out very good, no sugar added. 😊 I like my oats at room temperature, but if you like it hot, you can microwave it. Honestly, I couldn’t finish the whole bowl, so I saved the leftover in a container in the fridge. I will snack later with some chopped apple. 🍎
