The best way to start the day is with dessert. I enjoy my early morning green tea with chocolate. And I don't feel the slightest twinge of guilt (if you've been reading my posts for a while you'll know that the chocolate is 100% healthy!) Recently friends with an entire orchard of organic apricots popped in with a couple buckets of the freshly picked fruit. I froze apricots for smoothies. I dehydrated apricots to add fruity variety to the muesli I make. Then I concocted a decadent new dessert that had even my husband indulging in a morning treat!
Because today is #fruitsandveggiesmonday, inspired by the sweet , you all get to savour a cyber treat of this decadent mousse! If you whip up a mousse of your own let me know if you also indulge for breakfast!
At the same time we were blessed with the organic apricots we also received a box of huge organic cherries. Together the two promised an extravaganza for the taste buds!
CARAMALIZED APRICOT AND MACADAMIA NUT MOUSSE
1 cup raw and unsalted macadamia nuts soaked for 6 hours and rinsed
1/4 cup dates soaked overnight in just enough water to cover them
8 to 12 apricots (depending on size and your preference for more fruity or more mousse)
1 frozen banana
1/2 cup organic coconut oil
dash vanilla seeds or extract
dash of cinnamon
Add all the ingredients to your blender. Soft apricots and dates first. Blitz thoroughly until smooth. The macadamia nuts and coconut oil will make it extremely thick. Layer your mousse like a trifle with cherries. I've also tried it with blueberries and they are almost as good. Refrigerate until chilled.
What I love about this type of recipe is -apart from it being so quick and easy to slap up - it is so delicious that many people can't believe it is only natural, healthy ingredients. But be warned, it is a very rich dessert! You won't be hogging this one. You'll need to share.
