my stir-fry luffa in coconut milk

Luffa or sponge gourd is one of my favourite's veggies in this worldπ, easy to proceed and has many benefit to our health too. On Monday, I usually don't do shoppingπ but only use anything available in the fridge. My FIL was doing the shopping last saturday and he bought some luffas. I think that we almost have luffas every monday πππ
So, today I just gonna stir fry it and add some coconut's milk too. Never failed to cook this simple food so far. Let's just start with preparing the sliced onion, garlic, chilli, minced ginger and bay leafπ
Then stir-fry it with 2 spoonfull cooking oil (you can use margarine if you want toπ or olive oil)
Add the chopped luffas and stir it for a minute
When it half cooked, pour 300 ml thin coconut milk and keep stir it for couple more minutes
Just keep stir it and don't forget to add salt and correction the taste, before turn off the heat.
see, it is so simple and quick, only 15 minutes to prepare this foodπ
This is our lunch menu, sometimes I add some silky tofu and lemongrass too, but today I didn't find it in the fridgeπ
. I served this with hot rice, onion-chillies sauce and fried eggplants, but it would be perfect with salty fish or anchovies too (but it's for non-vegan onlyπ)
