Happy Monday, it is fruitsandveggiesmonday with lenasveganliving and this is my entry. It is my vegan version of the fish cake. I used to like fish cakes before going vegan, but I could not stand it if there where bones in it, I would literally spot eating if I found 1. I haven't had fish cakes in a few years now and thought I could make a vegan version, and best of all there won't be a single bone I promise, because fish are friends not food, from finding Nemo lol.
Ingredients
500g chickpeas
2 cooked potatoes with skin
1 onion
4 garlic cloves
2 tablespoons fresh chopped parsley
2 tablespoons nori flakes
Pinch of salt and pepper
First I got the potatoes on the boil with the skin left on, and baked the chickpeas onions and garlic.
Once the potatoes where cooked I peeled of the skin.
And popped in the food processor.
Then added the nori, salt and pepper.
Then the rest of the ingredients and blended.
Then I put some mixture in some crumbs.
And form some cakes.
Then just a matter of baking till golden brown and crispy on the outside.
They are awesome with chips, I squeezed a little lemon over the fishless cakes and of course some ketchup.
