Here is my Vegan Minestone Crockpot Soup I am currently making tonight! I was going to save this post for another day when I saw the FRUITSANDVEGGIESMONDAY contest by so I thought, why not? I absolutely LOVE it! Extremely low calorie but extremely tasty and filling! Normally I make a huge batch, but tonight I cut it in about half due to the fact that my 18qt crockpot lid broke and now I have to settle for a smaller one.
I already had all of the veggies cut and food saved expect green beans and the onions but for a normal large batch, what you will need is:
• 5 Large Carrots
• 1 Large White Onion
• 3 Small Yellow Summer Squash
• 1 Cup Green Beans
• 2 Medium Zucchini
• 5 Medium Celery Stalks
• 1 Red Bell Pepper
• 1 Green Bell Pepper
• 1 Tbsp Extra Light Virgin Olive Oil
• 1/2 Tbsp Black Pepper
• 1/2 Tsp Salt
• 2 Tbsp Minced Garlic
• 1 Tsp Parsley
• 1 Tbsp Garlic Powder
• 1/8 Cup Fresh Oregano
• 2 Cans Reduced Sodium Kidney Beans
• 2 Cans Died Tomatoes (Basil, Garlic, Oregano)
• 2 Boxes Organic Vegetable Broth
• 1 Can White Kidney Beans
Directions:
- Rinse all veggies.
- Dice celery, carrots, and onion.
- Cut peppers into about 1/2inch cubes
- Cut zucchini and squash into half-moons or 1/4ths
- Add all veggies, canned beans, tomatoes, and vegetable broth to the crockpot.
- Add spices and olive oil. Mix.
- Turn on High and cook for 5-6hrs.
- Enjoy!
