Now, everyone loves chocolate, but sometimes we need a fruity, creamy change. Today lets mix things up. For healthy living, birthdays, holidays, or just any day...we can celebrate when it's healthy for you. Eating fruits and nuts, you can't go wrong.
So, without any further discussion! Let’s celebrate YOU…
By making Toasted Almond Blueberry and Pomegranate Cheese Cakes!
You will need
Crust:
1 cup raw almonds* toasted
1 cup organic dates
Filling:
1/12 cup raw cashews (soaked overnight)
¼ cup lemon juice
1/3 cup organic coconut oil
½ cup plant based milk
½ cup agave
Toppings:
Blueberries, pomegranate seeds or whatever fresh fruity topping you wish!
Preparation:
Lightly grease muffin tin.
First we will prepare the crust.
Place almonds in blender. Blend almonds to fine meal. Set aside.
Place dates in blender and blend until forms a ball. Combine almond meal and dates in food processor and pulse until combined.
Looks yummy!
Press mixture into muffin tins. Oh, notice this... I like to use parchment tabs in bottom of pan, this makes removal easier! Place in freezer while you prepare the filling!
Now the filling!
Add all filling ingredients to blender and blend until fully processed.
Now, take muffin tin out of freezer and fill each crust with filling. So light and fluffy!! I'm not going to lie, the filling is wonderful, so creamy! Kids both big and small will love this treat!
Topping
Top with pomegranate seeds and blueberries!
Now back to the freezer for about 6 hours!
