On my quest to eating clean, I have realized that you have to get creative in order for a healthy diet to become a lifestyle and for it to be sustainable. I have always had a problem eating enough veggies, so now that I am incorporating them into every meal I make it a priority to mix it up and find creative ways to make eating my veggies delicious and fun to eat.
Zucchini has easily become one of my favorite vegetables to add to my meals! I add them to my salads, my pastas, my morning omelets, or as a side. Zucchini is great for weight loss because its low in calorie and high in water content and fiber, it is great for cardiovascular health, and it can improve overall health because it contains lots of vitamins, minerals and amino acids. It is also quite delicious and can be made a ton of different ways!
I wanted to share one of my favorite & easiest ways to cook Zucchini!
ALL YOU NEED IS:
ZUCCHINI (CHOPPED)
LEMON PEPPER
PAPRIKA
GARLIC SALT
LEMON (ZEST)
OLIVE OIL
PREP TIME: 5 MINUTES
COOK TIME: 12 MINUTES
HEAT: 425
I CUT UP MY ZUCCHINI IN CUBES (AS SHOWN)
DRIZZLE OLIVE OIL ON TOP AND TOSS THE ZUCCHINI TO MAKE SURE ITS ALL COATED
SPRINKLE THE SEASONINGS LISTED ON TOP
GRATE LEMON ZEST ON TOP
MIX IT ALL TOGETHER TO MAKE SURE IT'S WELL DISPERSED
STICK IN THE OVEN FOR 12 MINUTES
& VOILA!!!!!!!
IT'S FLAVORFUL, CRISPY AND HEALTHY!!!
