This happened three days ago! Only today have the time to post it up!
Butternut Squash Spaghetti with Chicken Bolognese. Joe and I made the sauce ourselves using fresh tomatoes and blended them with onions and garlic and a whole lot of spices too!
We oven-baked the butternut squash for 35 minutes and started to prepare the sauce while waiting.
We added Shiitake Mushroom and Mince Chicken into the sauce, cooked in the pan and served it with my new favourite Vegan Cheese.
Instead of removing the skin, I used the baked squash as the 'plate' for myself. I also add some greens to the meal.
Ever since I did WildFit 90 days challenge, my obsession towards rice and bread has gone. I do feel like eating them occasionally but I'm no longer depending on them. And that's the freedom I want. Removing rice and bread from everyday diet helps healing the inflammation in the body.
