I know, I know, this paleo stuff again... :) Actually I'm not making paleo cakes because I truly believe that this diet is the best. I simply believe that refined sugar and flour is not my friend.
Thanks God there is so many different alternatives for white sugar and flour, it isn't that hard to live life without them anymore.
Check out this no-bake paleo strawberry shortbread. It is just as tasty as it is beautiful.
Ingredients:
For the crust:
- 3/4 cup unsalted peanut
- 1/4 cup almond flour
- 4 pitted dates
- 2 tablespoons coconut oil
- 1/4 teaspoon salt
For the cheesecake:
- 2 cups almonds ( soaked in cold water for at least 4 hours or preferably overnight)
- 1/2 cup canned coconut milk ( shaken )
- 1/4 cup coconut oil, melted and cooled
- 1/3 cup honey
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon vanilla extract or 1 teaspoon vanilla bean powder
- 2 cups strawberries, halved
- Add the ingredients of the crust to a food processor and pulverise until it comes together to a sticky dough, with small bits remaining. Press the date dough evenly along the bottom of the prepared pan.
- In the same food processor combine all of the filling ingredients except the strawberries and blend until the mixture is silky and creamy.
- Taste the mixture and adjust the sweetness level.
- Pour the filling into the pan over the crust. Smooth out the top and press the strawberry halves into the bars.
- Place in the freezer to firm up for at least 3 hours before cutting. Run the knife under hot water to warm it up before cutting the bars. Let them thaw at room temperature for 10-15 minutes before serving.
