First of all, I have to say that I love healthy recipes and cook them a lot - especially deserts - I have some great things to replace unhealthy high in fat/sugar cakes with super tasty and healthy options such as Healthy Oatmeal Cookies.
It's one of my favorite cookies - you can easily take it to go and eat it as a snack or replace a breakfast if you don't have enough time to cook it. This dessert is tasty, healthy, no sugar or flour added. oh! I forgot to mention, that you would need just 10 mins to make a dough and 20 mins to bake them. Ok, let's get started!
INGREDIENTS for 6 cookies
- two whole super ripe banana
- 2 cups of oatmeal
- any kind of nuts you like (I have cashew, almonds)
- any kind of seeds you like (I have poppy seeds and chia)
- dry cranberries (40 grams)
- dates (6 big dates)
- shredded coconut
REPARATION
Preheat the oven to 190 °C (375 °F). Line two large baking sheets with parchment paper.
Cut dates in the small pieces, knead bananas.
Combine all ingredients in the big bowl.
With a 60 ml (¼ cup) ice cream scoop, place six to seven dough balls on each baking sheet. Press the balls so that they are about 2-cm (¾-inch) thick.
Bake one sheet at a time for about 15-20 minutes or until lightly browned. Let cool on a wire rack. Serve warm or cold.
Super easy and super tasty! These cookies are chewie, healthy, they have natural sweet taste and you can eat them knowing that it's healthy desert - definitely not a guilty pleasure!
