I love eating sandwiches for lunch and dinner and this mashed chickpeas and avocado sandwich is my new favourite. I have also shared mushroom spinach and onion sandwich recipe on my blog. Along with avocado and chickpeas, I have used spinach, sprouts, raisin for a bit of sweetness and walnuts for crunch. For the bread, I have used organic whole wheat bread. I like to use whole wheat because it has more finer and nutrients than the plain white bread.

Avocados are one of the top superfoods to add to your diet. In terms of calories, one medium-size avocado has around 215 total calories. Avocados are high in healthy fat, fiber and phytochemical content.
INGREDIENTS
4 Whole wheat bread
½ avocado
½ cup of cooked chickpeas
2 Tablespoons raisin
2 Tablespoons chopped walnut
Handful of spinach
Handful of sprouts
DIRECTIONS
STEP 1 Mash chickpeas and avocado using back of fork.
STEP 2 Toast your favourite bread.
STEP 3 Make a bed of spinach on the bread. Add the avocado and spinach mixture.
STEP 4 Top it with raisin, walnut and sprouts.
STEP 5 Close it with second bread, cut in half and enjoy!
