Fried cassava with green guasacaca
One of the vegetables I really enjoy is cassava; I use it a lot in soups, as a side dish to accompany lunch to avoid having pasta or rice, or simply boiled or fried. Usually, when I buy this vegetable, I immediately peel it, wash it thoroughly and put it in the fridge until I’m ready to use it. I use this method to keep it fresh for much longer, as otherwise it always went off.
Una de las verduras que disfruto mucho es la yuca, la utilizo mucho tanto para sopas, para complementar como contorno algún almuerzo y así evitar la pasta o el arroz o simplemente sancochada o frita. Generalmente cuando compro está verdura; inmediatamente procedo a quitar la concha, lavar muy bien y refrigerar, hasta que llegue el momento de utilizar. Este método lo utilizo para preservar por mucho más tiempo, ya que de no hacerlo siempre se me dañaban.
When I decided to use them, they were frozen, so I put them in a saucepan and brought them to the boil until they softened.
Cuando decidí utilizar estaban congeladas, así mismo coloque en una olla y lleve a sancochar, hasta ver qué se ablandaran.
Once they had softened, I cut them into small pieces, then fried them in plenty of oil until they were golden brown all over.
Luego de están blandita procedí a cortar en pequeños trozos para luego freír en suficiente aceite y dejar que doraran por todos los lados.
To make the green guasacaca, use 1 sprig of coriander, 1 spring onion, 1 small onion, 2 cloves of garlic, 5 chillies, vinegar, oil and salt. Blend all these ingredients together and spoon the mixture over the fried cassava. I really enjoy this combination whenever I make it.
Para realizar la guasacaca verde,utilice 1 rama de cilantro, 1 rama de cebollín, 1 cebolla pequeña, 2 dientes de ajo, 5 ajíes, vinagre, aceite y sal. Todos estos ingredientes los lleve a licuar y coloque encima de la yuca frita.Realmente disfruto mucho está combinación cuando la preparó.
