I’m so excited to share this recipe with you all today!
Last Saturday, my hubby came home with a huge bag of eggplants and tomatoes.
They looked so perfect and fresh, that I needed to do something delicious with them.
We usually just fry our eggplants. It’s our way of cooking them, but this time I really wanted to try something different.
So, I made a salad instead. And you know what? It turned out so good! 😋
Ingredients:
• 6 small eggplants
• 2 medium tomatoes
• 2 small red onions
• 3 tablespoons soy sauce
• 1 teaspoon sugar
Let's cook!
First off, I washed the eggplants under running water. Then I peeled off the skin. I didn’t cut them. I left them whole like that, as it makes them easier to handle later on.
Next step, I put them in a pot with just a little bit of water and let them boil. I cooked them until they were soft enough.
And to know that, you need to poke them with a fork. That’s when I knew they were ready.
Then I took them out and gently squeezed them with a fork to get rid of any extra water.
While the eggplants were cooling, I prepped the other ingredients too. I chopped up the tomatoes and onion into small pieces.
Then I made the dressing in a small bowl. I mixed in the soy sauce and a tiny bit of sugar just to make the taste perfect. I stirred it all well until everything was mixed together nicely. You can adjust how much you put in too. It’s all up to what you like best!
Once everything was ready, I put all the ingredients one by one... the tomatoes and onion. Then I poured the dressing over top.
And that’s it! Your fresh Filipino eggplant salad is ready to serve! 🍽️
