I want to share with you a dish that came from my simple craving and whatever ingredients I had on hand.
It’s perfect for lunch, especially when you want something filling and flavorful.
Actually, I was trying to decide what to cook when I saw I had some pork cuts stored in the freezer.
Also, when I looked at my vegetable basket, there was this fresh squash and pechay waiting to be used.
So because I really wanted something warm and soupy, I decided to make Pork Nilaga Soup.
Ingredients:

• 500g pork
• 1 small squash
• 1 bunch pechay
• 1 medium tomato
• 1 small red onion
• 1 pork both cube
• 5-6 cups water
• 1 tablespoon fish sauce
• salt and pepper to taste
Step-by-step procedure:

First, I washed the pork pieces thoroughly to remove any dirt or blood. I placed them in a big pot, poured in enough water to cover the meat, and added some salt and crushed pepper right away. Then I brought it to a boil over medium heat. Adding the salt and pepper at this stage lets the flavor go deep into the meat as it cooks.


Next, I added my aromatics which are onion and tomatoes. I also lowered the heat to a gentle simmer, covered the pot, and let it cook for about 30 to 40 minutes, or until the pork became tender and soft.


Before putting in any vegetables, I seasoned the soup properly. I added the pork cubes and poured in some fish sauce, then stirred well. I tasted it and the flavor was perfect. It's savory, rich, and balanced.

Now that the taste was just right, I added the squash cubes first. Squash needs a few minutes to soften, so I let it simmer for about 8–10 minutes until tender.

Then I added the pechay leaves. They cook very fast so I just let them sit in the hot soup for 2–3 minutes until they turn bright green and soft, then turn off the heat right away. This way, the veggies stay fresh and not overcooked.
Once everything was perfectly cooked and tasted delicious, I served it steaming hot in a bowl and paired it with plain white rice. 🍽️


It was so comforting and satisfying.
