The signature dish I've chosen to share with you today is nothing fancy nor nothing grand; classic Meat Balls served on a bed of stir-fried Rice. This is one of my family's favourite meals, good old comfort food!
Three meat balls for Mama Bear
Four meat balls for Papa Bear
The Recipe - Classic Minted Meat Balls
- 700 gram lean ground Beef
- 1 finely diced Onion
- 1 grated Carrot
- 100ml Oat flakes
- 5ml Salt
- 10ml ground Coriander
- 2 cloves crushed Garlic
- Fresh Mint leaves, Parsley & Thyme - chopped
- 1 beaten Egg
Fresh produce, from the garden to the table.
All ingredients are mixed together and formed into smallish round meatballs.
Shallow fry meatballs on both sides in a little oil.
Keep warm till serving.
Fried Rice
- Cook approx 1 cup Basmati Rice in salted water
- Sautee 1 diced Onion, 1/4 - 1/2 diced yellow Capsicum & Portobello Mushrooms in a little butter & oil (quantity can vary)
Recognise these? I used half for my BISS on Saturday, but still had some leftover.
Add cooked rice and stir fry lightly till flavours have mingled, season to taste.
Serve meat balls on a bed of stir-fried rice with steamed fresh vegetables in season on the side.
