This winter favourite is made with leftover roast chicken and gravy. It harks back to my childhood and is based on a dish my mother used to make. I always enjoyed it and we didn't often have it because roast chicken and chicken of any sort rarely featured. A consequence of my Dad's childhood and war related trauma.
It's simple: onion, peppers, mushrooms, the chicken and the gravy and a little flour to thick the liquid a little. I also add a dash of white wine and if there is leftover cream (that hasn't happened in a while), a dash of that too, turns leftovers into decadence.
Sprinkle with parsley and serve on fluffy potatoes and minted peas.
Oh, and the leftover of that becomes the filling for a pot pie and the mash will go into fish cakes.
A mini progress report
Thank you to everyone who commented and supported yesterday's post. I have connected the family with a friend and villager who has both a legal background, a penchant for the underdog and an antipathy towards corporate bullies. They meet on Friday and Andrew sees the surgeon tomorrow. When I have news, I will share it.
