As I'm writing this, I'm listening with half an ear to our presidential address about new lockdown measures for a rampant third wave of the Covid virus which has brought the highly infectious Delta variant. The number of cases are the highest in Gauteng, which is the major economic hub of South Africa; so high that many Covid patients are having to be transported to other provinces.
Each one of us knows someone who has come down with Covid, and sadly many whose lives have been lost.
Naturally the economic impact is a big concern especially when we all remember last year's hard lockdown where the country's economy took a hard knock; our bnb had to close for around 6 weeks so there was no income during that period. I've spoken about this before and that's when Hive came to the rescue.
Sounds like our economy will not be hit as hard this time around, except for restaurants who can only offer takeaways and holiday resorts expecting Gauteng visitors as they cannot leave their province for leisure travel.
Our bnb will be spared as our operations changed to mainly business bookings ever since Covid first reared its ugly head.
Talking about ugly; I made apple muffins today and they turned into mini volcanoes, really did not look appetizing at all. I certainly did not even feel like having one of these for teatime nor was I taking photos of this baking oddity until I was chatting to on Discord and wanted to show her something to laugh about.
Clever gal that she is, she suggested I cut the tops off, make a cream cheese icing and turn them into angels or butterfly cupcakes.
Talk about turning an ugly duckling into a swan!
We had a lovely guest who visited from Gauteng with her son for a whole week, so she made it back just in time! Her departing gift was a slab of Lindt Chocolate, so I melted a little of that to try and pretty up these unattractive muffins, but was not going to waste the whole slab!
I had no cream cheese, but made a small batch of salted butter icing and it worked really well.
So Fiona, you reminded me with what at first appeared to be a flop bake, that no matter how bad things look, we can always turn it around and make something out of nothing; just need to stay calm and use our common sense to turn a bad situation into something really good, as we should strive to do with most things in life!
I've decided to bake my own bread again till the worst of this awful 3rd Covid wave is over, much healthier and tastier in any case, so that's another lesson I learned as homebaked certainly is the best!
