For some reason, eggs have become the headline of our Thursday supper. We both love eggs and there are lots of things one can do with them. One of our favourites is a simple, folded omelette.
As I mentioned yesterday, we are having our first taste of winter and, happily some rain. However, it does mean that I constantly have lap dancing felines that do their best to come between my keyboard and I.
That "black hole" is a Princess Pearli and the cause of a numb bum...
Anyhow, I digress. On warmer evenings, I will do a simple salad supper. Sometimes I will do my version of a frittata, or just old fashioned hard boiled eggs.
That means that my omelette making skills rust a little. Although a folded omelette is not difficult, the pan must be just right and one shouldn't be multitasking.
I use a combination of olove oil and butter in the pans in which I have cooked and set aside the filling. This is as much about flavour and colour as it is about the omelette not sticking. When you add the egg, especially if your non-stick pan, like mine, isn't, make sure it's hot. It must be hot or else the egg will stick: folding over, and slipping from the pan, just won't happen.
I use two pans. Each "cooks" differently.

With a side salad, and two potatoes for The Husband, it's a more than ample meal.
Neither omelette was perfect. One pan was not quite hot enough and the other was a little too long in the pan. That said, my skills are not quite as rusty as I thought.
