Greetings to The sons and daughters of our great Nation Nigeria, there's never a place like Home, trust me on that, My Country my pride, thinking about all of the things I love about my Country especially my State and tribe is our very own special delicacy, which is one of the things that spot us out, and today ladies and gentlemen in line with the #Hivenaija weekly contest for this week I'll be guiding you all on How It's Made talking about the Efik/Ibibio Best, favourite mouth watering SOUMPTOUS meal, that you can't say NO To 😂....
It's A very delicious Food that has so become a household name and a National pride among every Nigerian anywhere in the world, so without further or due let me take you right in....
INGREDIENTS USED INCLUDE
• Coco-Yam
• Fresh pumpkin leaves, water-yam leaves or sweet potatoes leaves
• Smoked fish
• Dried fish
• Periwinkle
• Crayfish
• Cows skin
• Fresh Pepper
• Seasoning cube
• Dried meat(cow meat)
• Palm oil
• salt
First of all it is prepared with Yam, coco-yam or water-yam which ever you prefer, pill off the bark wash and rinse thoroughly with clean water,
Then this is used to manually grind it into paste-like substance, when that is done, proceed to wash the leaves thoroughly well to avoid sands, prepare other ingredients listed above and make sure they are washed and sand free, however more hands will be needed because the preparation process can be time consuming cause it takes time to carefully finish the wrapping so they don't burst open while cooking ..
It's time to wrap the grinder substance with the leaves either pumpkin, sweet potatoes or water-yam to wrap depends on whatever you prefer,
Drop a small amount of palm oil in the pot that is to be used for the cooking and placed the wrap ekpan inside , then you proceed likewise till it is finished, when we're done we add all the above listed ingedient like periwinkle, dried, smoked fish, crayfish, meat, cowskin, pepper, seasoning cubes, salt etc. All at once
When all that is done pour in hot water to a normal level cover and placed the pot on fire for 20-25 minutes
After that open the pot now pour in enough palm oil (depends on quantity Cooked) for better Rich taste, you should reserve some sliced leaves to be added now, then cover to cook for another five minutes before stiring well with a wooden spatula,
However if it's looks hard not moist enough you can add water little by little to your desired texture, cover to cook for another five minutes then take it down.
